Salt & Straw Makes Long-Awaited Bellevue Debut with Grand Opening Celebration

On Friday, April 24, 2026, the popular Portland-based artisan ice cream brand Salt & Straw officially opened its doors in downtown Bellevue. The new shop, located at 10415 Northeast 4th Street, marks the company’s first-ever location in the city and its eighth in Washington state.

Grand Opening Highlights:

  • Early Bird Rewards: To celebrate the launch, Salt & Straw offered a special promotion for the first 100 guests in line, who received gift cards that could cover anything from an ice cream flight to a full year’s supply of scoops.
  • Neighborhood Homecoming: Co-founder and CEO Kim Malek described the opening as a “meaningful homecoming,” noting that the company had been searching for the perfect Bellevue storefront for years after previous plans for a different downtown location fell through in 2025.
  • Special Collaborations: Leading up to the debut, the shop partnered with Bellevue’s Ascend Prime Steak & Sushi to create a limited-edition dessert called “The Miryoku.” Additionally, the Bellevue location is premiering the brand’s “May Flower Series” a full week before its national release.
  • Weekend Events: The festivities continue through the weekend. On Saturday, April 25, customers buying a single scoop receive a free kids’ scoop and a coloring page. On Sunday, April 26, the shop will host a pop-up affogato bar featuring coffee from the local Bellden Cafe.

The Bellevue expansion is part of a steady growth phase for the brand, which is known for its inventive, locally-inspired flavors and its mission to serve as a “third place” for community gathering. The new shop occupies a prime spot near Bellevue Downtown Park, replacing a former Starbucks pickup location.
